- 3 green cardamom
- 1 inch stick of cinnamon
- 1/2 tbs of peppercorn (adjust according to taste)
- 1 tbs of coriander seeds
- 1 tbs of cumin seeds
- 2 tbs of fenugreek leaves
- 1/4 tsp of turmeric
- 1/2 tsp of kashmiri chili powder (adjust according to taste)
method:
- In a pan dry roast the first six ingredients until a nice aroma fills the kitchen
- let cool and transfer to a dry and clean grinder
- make a fine powder and store in an airtight container.
Notes:
- The masala stays fresh for weeks if refrigerated but freshly ground spice mix has its own flavor
