Tandoori masala powder recipe

The secret for a perfect tandoori is a freshly ground spice mix that adds tons of flavor and aroma to the meat .follow the simple recipe to enjoy restaurant style tandoori at home .

Ingredients :

  • 4 cloves (adjust according to taste) 
  • 3 green cardamom
  • 1 inch stick of cinnamon
  • 1/2 tbs of peppercorn (adjust according to taste)
  • 1 tbs of coriander seeds
  • 1 tbs of cumin seeds
  • 2 tbs of fenugreek leaves 
  • 1/4 tsp of turmeric 
  • 1/2 tsp of kashmiri chili powder (adjust according to taste)
method:
  • In a pan dry roast the first six ingredients until a nice aroma fills the kitchen
  • let cool and transfer to a dry and clean grinder 
  • make a fine powder and store in an airtight container.
Notes:

  1. The masala stays fresh for weeks if refrigerated but freshly ground spice mix has its own flavor 
  2. Adjust the heat to your liking by reducing cloves,peppercorn and chilly powder
