Pongal recipe (sweet and savory )


Pongal is a harvest festival celebrated in the southern part of india.On this auspisious day rice is cooked along with pulses and jaggery and is offered to the "Sun God " for prosperity.lets see how to make this dish in sweet and savory version. 
Ingredients:
Rice :1 cup
mung dal : 1/2 cup
water : 3 cups

For savory or kara pongal/ven pongal:

butter or ghee :1 tbls+more for roasting nuts
curry leaves : few
cumin seeds:1-2 tsp
whole peppercorn:1 tbls
salt :as per taste 
nuts for garnish

For sakkarai or sweet pongal:
jaggery:1/2 cup 
water:1/4 cup
crushed cardamom seeds :1 tsp
butter:1 tbs+more for roasting the nuts and dry fruits
nuts and dry fruits for garnish


  • Start by pressure cooking  one cup rice and half a cup mung dal with double the ratio of water 
  •  pressure cook for 3-4 whistle ,the product should be mushy, this is our base .
  • lets prepare our savory recipe first .Heat a little oil in a pan and fry some cumin seeds,whole peppercorns and few curry leaves for a minute.
  • In a bowl take out a portion of cooked rice and dal and add butter or ghee
  • add the tempering and salt mix well garnish with favorite nuts
  •  ven pongal or kara pongal is ready to be served .enjoy with coconut chutney.
Now lets move on to our sakkarai pongal or sweet pongal
  • In a sauce pan add 1/4 cup of water and 1/2 cup jaggery and bring to a boil filter for impurities
  • Meanwhile in a frying pan add some butter and roast some dry fruits and nuts.
  • In the remaining portion of rice and dal add butter or ghee
  • add the boiled jaggery and crused cardamom seeds,mix eveything well.
  • and finally top it up with the roasted nuts and dry fruits .
  • our sweet pongal is now ready for the offering.
