Bhindi masala/okra/ladiesfinger masala

okra- 1 pound
red onion -1/2 a big one
tomato- 2 medium size
green chilies -4 slit
fenugreek seed -1/2 tsp
cumin seeds-1 tsp
mustard seeds -1/2 tp
turmeric -1/2 tsp
red chili powder-1/2 tsp
garam masala - 1 pinch
yogurt-1 tsp
salt - to taste
oil - 1 tsp


  • wash the vegetable and cut into 1" pieces,also slice the onion lengthwise and chop the tomatoes 
  • heat a pan, add oil,add mustard seeds,cumin seeds and fenugreek seeds,let it crackle.
  • add the sliced onions,salt,slit green chilies,the turmeric and the red chili powder,cook well till the raw smell goes off of the masala
  • add in the tomatoes and cook until mushy -maybe for two more minutes .
  • now add in the vegetable and the yogurt-the yogurt keeps the okra from sticking  
  • cover and cook until the vegetable is soft to touch,this may take 5-6 minutes
  • sprinkle the garam masala ,season with more salt if needed.and turn off the heat
  • serve with roti,naan or your favorite bread.
